The #CachopoDay that can be enjoyed at the Las Tablas del Campillín Restaurant in Oviedo, is a tribute to one of the two dishes that come to mind when tourists think of Asturias: fabada and cachopo.
If the first has been, along with the Asturian pot, the best known beyond the Picos de Europa, the second has become popular not without some controversy because of its dark origin only for a few years.
The last, to date, tribute to the cachopo is the #CachopoDay organized by the Las Tablas del Campillín Restaurant in Oviedo and which will last until December 2.

The Las Tablas del Campillín Restaurant has tables (if I am allowed the pun) in this cooking of cachopos, since its manager-chef Juanjo Cima has been cooking cachopos since 2009.
The Asturias Championship of Cachopos has already awarded him in all categories, “Best Cachopo”, “Best Cachopín”, “Cachopo Audience Award” and “Best Cachopo with Veal Asturiana”, in addition to his sister restaurant, “Vinoteo” (which we have already talked about on the occasion of his "Game of Thrones Menu") was the best cachopin in 2014 (the first edition of the Cachopos Asturias Championship) and 2nd prize for the best cachopin in 2017.

"A cachopo are two Asturian beef fillets stuffed with ham and cheese, quality and Asturian, which are battered and fried."
From there, the small variations appear, because there are places where it does not batter, it is only breaded a little with beaten egg, in the old way.
Also, for some time it has been breadcrumbs or, in a more modern version, panco, to batter and fry it.
The next step already multiplies the possibilities of the cachopo, because you can change one cheese for another, include peppers in the filling, change the ham for beef jerky, etc.
The limit is set by the imagination of the restaurant.
And it has been a restaurant, "Las Tablas del Campillín" that has had the idea of celebrating #CachopoDay, with three major sponsoring brands (Makro, Coca-Cola and Veal Asturiana) with this menu to share between two people (let's flee from the fashion of the cachopos of individual size), because the idea is that it is shared, spoken, enjoyed in company:
